71-2318 – Moussaka with tofu topping

These are all the ingredients I put in our dinner last night (there are some out of sight too). It might seem like that’s a lot but it was faster to prepare it than it was to sketch it all. The dish has a layer of grilled eggplants (aubergine), a sauce of tomatoes, onions, carrots and zucchini and a topping made with tofu puréed with soy sauce, lemon juice, mustard, and almonds. We served it with garlic bread…yummy!

Yum, now if I could get all of that squished up and put it in my feeding tube my life would be complete well if I could taste it to it would be but who wants to taste food that comes from your feeding tube I suppose anyways it sounds delicious and I want some matter of fact I want all of it! You rock
