1597 – Oregano pesto

Last night we ate some of the vast amount of oregano we had growing, making a simple pesto sauce with garlic, nuts and olive oil. It turns out, though that it’s not exactly Italian oregano – instead it’s called Indian Borage, Spanish Thyme, Mexican Mint or Cuban Oregano! Still tasted great though. These are a few of the leaves that we had left over.
